Cauliflower Cheese

Serves: 10
Ingredients
- 120ml Millac Gold
- 400ml Viva Milk
- 50g Lakeland Dairies Butter
- 1 studded onion (bay leaf & cloves)
- 50g flour
- 3 medium cauliflowers
- 200g Cheddar cheese
- sea salt & freshly ground black pepper
Method
Cut the cauliflower into florets and cook in boiling salted water for 5 minutes. Drain well and place into a serving dish.
Melt the Lakeland Dairies Butter in a heavy bottomed pan. Add the flour and cook out.
Warm the Viva Milk with the studded onion and allow to simmer for 10 minutes. Add the Millac Gold, Cheddar cheese and allow the mixture to melt together. Pass through a chinois and season well.
Cover the cauliflower with the cheese sauce and oven bake until golden brown.
